SAFER FOOD PACK

The Environmental Health Food Section have introduced a second improved version of their Safer Food Pack. This is in line with the expected requirements of the Food Standards Agency (FSA) for all businesses to have a documented food management system which controls food safety.

The first part of the pack demonstrates the legal requirements for compliance with the Food Hygiene Regulations. It outlines the requirements and then, in checklist format, allows a food business to check in detail whether they comply.

The second part explains the legal requirement of undertaking a ‘Hazard Analysis’, a process by which the food business assesses the hazards associated with their food handling operation. Many food businesses generally follow the same process of purchase, cooking, reheating, and cooling (all areas not specifically covered by the above Regulations). Formats are provided for typical food operations. The pack allows the food businesses to identify their high risk foods and then adopt and adapt a typical analysis format which applies to their business.

Finally, the pack offers a selection of record sheets so that Proprietors and Managers can monitor the key controls of :-

  • Training
  • Food Deliveries
  • Storage
  • Cooking / Reheating
  • Cleaning Schedules
  • Pest Control
  • Complaints
  • Monitoring
